Hey Mary, welcome to the list. It depends on your project, Kohana 2 has stood the test of time, is well tested, has a lot of modules and is well supported by the community. This would be the choice if have any existing Kohana websites as the upgrade path is easier. Kohana 3 brings new features to the table such as HMVC, improved database library, better class structure, far better routing, log drivers, etc ... Ryan (above) has setup a wiki dedicated to Kohana 3 and outlines a lot of stuff which may be of interest to you.
